These jam-filled wonders will melt in your mouth and impress your friends! Perfect for a holiday party or to go with your afternoon tea.
The Recipe:
1 cup butter
1/2 cup sugar
2 egg yolks
2 tsp vanilla
2 cups sifted flour
1/8 tsp salt
Raspberry jam (seedless)
Icing sugar
Water or milk
The Directions:
Mix butter and sugar until fluffy. Add in yolks and vanilla. Fold in flour and salt until it forms a ball. Refrigerate the dough for one hour. Divide into 4 sections and roll out each section separately. Cut in small rounds (cookie cutter or a small glass) and bake at 325 for 8-10 minutes.
Allow cookies to cool completely. Then spread jam and sandwich between two cookies. Mix up some icing and spread on top. And voila! You can add a dot of jam in the middle of each one or one of those edible silver balls.
